I think eggs today get a raw deal, from the worries about cholesterol with one a week to the guys in the gym relying on egg whites. Eggs are inexpensive, a number of different ways to consume and loaded with goodness.

Let’s begin; they are a perfect source of protein, containing all nine essential amino acids. They’re one of the best sources of choline which is an essential nutrient that must be consumed in our diet to maintain good health.

People avoid egg yolks because of the fear of cholesterol, but the choline in the egg yolk contains phosphatidylcholine (the popular supplement lecithin is 10 – 20% phosphatidylcholine). Without adequate phosphatidylcholine both fat and cholesterol accumulate in the liver. Choline also is known to help in the process of lowering homocysteine (a risk factor for heart disease) levels in the body.

Eggs contain lutein which is super for eye health.

What else

Riboflavin vit B2, vit B12. B12 is super for cell replication and red blood cell production, and assists in converting food to energy. Also has a beneficial effect on the nervous system.

Selenium, acts as a strong antioxidant. Also has been known to increase the ration of HDL cholesterol to LDL cholesterol.

One three of the four scientific scales for protein quality used in the past few decades – Protein Efficiency Rating, Biological Value and Net Protein Utilisation – Eggs consistently scored high in the quality of their protein, soundly beating milk, whey and soy.
